If you've read any of my cookbook reviews you know that I don't particularly care to cook. It takes time from other things of interest (like reading, writing, quilting, scrap booking…). I also think it comes from years of cooking for a lot of children who would rather eat mac and cheese or hot dogs than the "something" I spent hours creating for them.
That said, I admit to cooking. My husband and I still must eat and I don't think that he should have to do all of the cooking. I also admit that we enjoy "comfort food." That's why my favorite cookbook is The Best of Mennonite Fellowship Meals. It contains more than 900 recipes for home or a "dish to carry." The majority of the recipes contain ingredients most kitchens have on hand, the directions are easily understood and many are not time consuming at all.
Just a few of my favorite recipes: Zucchini Soup (on a chilly fall day it's the best), Wild Rice Casserole (wild rice is plentiful here in Minnesota), Hamburger Macaroni Goulash (comfort food at its finest), Breakfast Soufflé (make ahead and refrigerate for when the children come home for a visit), and Carrot Cake with Cream Cheese Frosting (THE WINNER!).
This is just down home cooking at its best. Armchair Interviews strongly suggests you keep this book close at hand. You won't be sorry.
